Earlier this week, James Martin joined Eamonn Holmes and Ruth Langsford on This Morning. He was serving up two dishes, a quick and easy classic quiche, followed by a peach crumble cake with honey cream. However, those watching at home couldn’t help but comment on the use of one particular ingredient.

Before revealing the method to his cake, James was on hand to answer viewers cookery calls first.

“Okay, so that’s the questions,” Ruth remarked. “Now peach and crumble cake!”

“Exactly!” James replied. “Nice and simple.

“We’ve got a basic cake mix here, I’ve got some softened butter which goes in here with some sugar – 200g of each – standard cake mix.

“Start that off slowly in the machine, otherwise, if we fire it up too quickly it will fly everywhere.

“Gradually bring the speed up until it all comes together – this is the crucial part of it, you want to get lots and lots of air into it,” he advised.

“While that’s happening, we’re going to make our crumble, which is equal qualities, but different stuff.

“We’ve got a little bit of Demerara sugar, some flour, softened butter, and a touch of cinnamon.”

He then brought the mixture together by rubbing all ingredients with his fingers in the bowl.

“This is going to be the topping of our cake,” James explained.

“Keep it quite rough and quite chunky.”

The next step was to prepare the peaches and he advised to not “chop them up too small”.
